Pineapple fried rice: savoury and sweet fried rice
I know that not everyone love food with sweet flavour, but for me, I think sweetness in food make it more delicious.
Such as this fried rice, it comes with not only savoury taste, the sweetness from pineapple and raisin makes it so additive. Actually it's so delicious that I really want to know who is the one who invent it, haha. How can he (or she) think about using pineapple and raisin in this rice dish, plus a lovely fragrance of the curry powder too?
Well, I don't know the answer but I know how to make it ^^. Making fried rice, you can use leftover (and cold) rice too, but you may not know that warm rice is better, as it won't stick together and not broken. Thai jasmine rice is the best for this dish, but when making cooking rice for making fried rice it's good to wash the rice throughly to remove the starch and your fried rice will be more beautiful (and delicious).
If you like you can sprinkle the roasted nut (esp. cashew nut), over the rice before serving to make it more delicious!!!
Recipe: Pineapple fried rice

Fried rice
300 g (360ml) ...................... Thai Jasmine rice
470 ml .................................. Water
300 g ..................................... Pineapple (I use Pineapple in light syrup)
1 tbsp .................................... Rice bran oil
170 g ..................................... Bacon, cut into small pieces
3 cloves ................................. Garlic, finely chopped
60 g ....................................... Carrot, cut into small dices
3 ............................................ Eggs
65 g ....................................... Raisin (soften with hot water before using)
Seasoning
3/4 tsp .................................. Curry powder
1/2 tbsp ................................ Sugar
1/2 tbsp ................................. Seasoning sauce
1 1/2 tbsp ............................... Soy sauce
1 1/2 tbsp ............................... Oyster sauce
For serving
................................................ Spring onion
................................................ Flossy pork
I use Thai Jasmine rice.
I use 300 g of rice or you can measure it with 360ml cup.
Put rice in a bowl and pour water into the bowl, mix quickly to remove some extra starch.
Drain the rice.
Put rice and water into a rice cooker.
Cook the rice.
Remove the pineapple from the syrup.
Cut into small pieces and drain the pineapple.
Heat the fry pan over medium heat.
Pour the oil into the pan.
Cook the bacon until golden.
Put the garlic into the pan, stir and cook for 1-2 minutes.
Put the onion into the pan, and cook until soften.
Add the carrot, and stir to combine.
Put the eggs into the pan, and stir until cooked.
Put the raisins into the pan, and stir to combine.
Add all the seasoning into the pan, and stir to combine.
Put the pineapple into the pan, and cook until the mixture become dry.
Add the hot cooked rice into the pan, and stir until combine.
Sprinkle the spring onion over the rice.
Turn off the heat.
Spoon into the bowl and sprinkle with flossy pork (and roasted cashew nut if you like), and serve.
