Honey BBQ Chicken Nuggets
No matter what the sport is, I never follow it unless its the finals. It stands true for the World cup Cricket or the Olympics or Football or any other sport. I would have no idea which match people would be talking about if it comes up in a conversation. But seeing me watch the finals with great enthusiasm would make people think, that I might have been following the match from the start. I think I really do not have the patience to keep waiting or look forward to matches every now and then. It stands true for tv shows too. I love movies which starts and ends on the same day in a matter of hours rather than watch an episode of a serial and keep wondering or worrying what would happen in the next.
Anyways, now that Super Bowl is tomorrow, I thought I should post a recipe that you would love to have while you catch up on the game. Isn't it fun to pair such events with food that each one of us like?

Anyways, now that Super Bowl is tomorrow, I thought I should post a recipe that you would love to have while you catch up on the game. Isn't it fun to pair such events with food that each one of us like?
This Honey BBQ Chicken Nuggets is something that we used to order without fail, if on a menu. They are so irresistible. All three of us like it. So we started making it at home too at times. My little one hums a song every time he likes the food that is offered and these chicken nuggets also makes him hum :).
Ingredients
- 1 chicken breast, cut into small pieces or nuggets
- Salt to taste
- Pepper to taste
- 1 egg, beaten
- 3/4 cup of all purpose flour
- 1 1/2 - 2 cup of bread crumbs
- Oil for frying
- Chopped spring onion for garnishing (optional)
For the sauce
- 1/2 cup of BBQ sauce
- 3 tbsp of honey
- 3 tbsp of tomato ketchup
- In a bowl, take the chicken nuggets. Add salt and pepper. Mix and marinate it well to evenly spread it.
- Let it rest for about 15 minutes in the refrigerator.
- Add the all purpose flour to the marinate and toss it well for the all purpose to spread evenly and form coating on all the chicken pieces.
- Heat the oil for frying. You will know that the oil is ready for frying when you drop few bits of bread crumbs in it and they fry up immediately. Turn down the heat to medium high.
- Dip the chicken piece in the egg and then roll it in the bread crumbs. Drop it in the oil and fry it a couple of minutes on both sides untill golden brown.
- Remove it into a plate lined with kitchen towel to drain away excess oil.
- You could serve it as is with some ketchup or coat it with the sauce described below.
Making of sauce
- In a saucepan, combine all the ingredients listed under the making of the sauce. Place it on medium heat and cook for about 5-6 minutes stirring occasionally.
- Place the chicken nuggets in a bowl. Pour the warm sauce mixture on top of the nuggets and stir it to coat all the nuggets. Serve warm, having garnished it with spring onion (optional) and some ranch dip as side.
- Make sure you have turned down the heat to medium high to fry the chicken nuggets. Else the nuggets would turn brown quickly but will remain uncooked inside.
- Keep the bread crumb in a bowl and not in a plate. This would help prevent wastage of bread crumbs and at the same time help the bread crumbs spread evenly over the cutlet.
- Don't waste the sides of the bread which you chopped off while making sandwiches/ pudding. If preserved in the fridge, they turn out to be amazing alternative to those store bought bread crumbs. Just run it in a blender to make coarse powder and dry roast it in a pan to make homemade bread crumbs.
